[RECIPE]: Banana Bread - Grain-Free/ Gluten-Free/ Paleo/ Keto(ish)

If you’re starting out this new year going more grain-free, I’ve got a sweet treat recipe for you. Although this is tagged under “keto”, let’s get one thing straight: bananas are NOT ketogenic. They definitely contain enough glucose to take you out of ketosis.

HOWEVER. The reason why I’ve tagged it keto is if you’re not on a strict long-term ketogenic diet and are cycling out of ketosis for a few days, this could be one of those treats you give yourself in that window. Because… Treats! ;)

It’s still a good high protein, zero-grain, “low-ish carb” banana bread, and definitely fits a grain-free or paleo diet.  

So many of the paleo or keto recipes I’ve come across are pretty complicated and involve too many exotic alternatives I’ll never use again. I’ve adapted this from various recipes and refined it along the way. It’s actually moist!

Coconut flour tends to suck up all moisture and dry everything out, but I think this 3:1 ratio of almond:coconut flours is a winner!

How to make grain free banana bread. paleo. keto. ketogenic.

INGREDIENTS:

  • 3 bananas

  • 3 eggs

  • 1/4 cup olive oil

  • 1.5 cups almond flour

  • 1/2 cup coconut flour

  • 1 tsp baking soda

  • Pinch of salt

  • 1 tbsp maple syrup, if more sweetness desired

DIRECTIONS:

  1. Preheat oven to 175 degrees Celsius.

  2. Line a baking tin with baking paper.

  3. Mash and blend all wet ingredients: bananas, eggs, olive oil.

  4. Fold in all the other dry ingredients and mix.

  5. Bake for 50 - 60 minutes.   

  6. Enjoy!
